First Course Tomato, Mozzarella and Black Olive Salad

Ingredients
  Ripe tomatoes 6 Large, peeled, seeded and cut into 1-inch cubes
  Mozzarella 8 Ounce, cut into 1/2-inch cubes
  Black olives/1 cup small black italian olives in oil 1 Cup (16 tbs), pitted
  Salt To Taste
  Ground pepper To Taste
  Olive oil 4 Tablespoon
  Vinegar 2 Tablespoon
  Minced basil/Parsley 1⁄4 Cup (4 tbs)
Directions

Combine the tomatoes, mozzarella and olives in a glass salad bowl.
Sprinkle with a little salt (the olives may be salty) and pepper.
Stir together the olive oil and the vinegar and pour over the salad.
Add the basil and toss carefully with a fork.
