First Course Tomato, Mozzarella And Black Olive Salad
|Ripe tomatoes||6 Large, peeled, seeded and cut into 1-inch cubes|
|Mozzarella||8 Ounce, cut into 1/2-inch cubes|
|Black olives/1 cup small black italian olives in oil||1 Cup (16 tbs), pitted|
|Ground pepper||To Taste|
|Olive oil||4 Tablespoon|
|Minced basil/Parsley||1⁄4 Cup (4 tbs)|
Combine the tomatoes, mozzarella and olives in a glass salad bowl.
Sprinkle with a little salt (the olives may be salty) and pepper.
Stir together the olive oil and the vinegar and pour over the salad.
Add the basil and toss carefully with a fork.
