Avocado With Shrimp Salad
|Cooked medium shrimp||1 Pound, coarsely chopped, cleaned|
|Celery rib||1 Large, finely chopped|
|Scallion||1 , finely chopped|
|Lemon juice||2 Tablespoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Ground black pepper||To Taste|
|Lettuce||4 (For Serving)|
|Tomato||1 Large, sliced (For Serving)|
|Freshly ground black pepper||To Taste|
1. In a medium bowl, toss together shrimp, celery, scallion, and lemon juice. Add mayonnaise and stir until blended. Season to taste with salt and pepper.
2. Arrange lettuce and tomato slices on each of four salad plates. Cut each avocado in half and remove pits. Remove flesh from the shells and place each half on a plate. Mound shrimp salad on top of each avocado and serve immediately.
