Spinach Salad With Warm Bacon Dressing
|Fresh spinach||10 Ounce, torn into bite sized pieces (1 Package)|
|Carrot||1 Large, grated|
|Blue cheese crumbles||1⁄2 Cup (8 tbs)|
|Olive oil||1 Tablespoon|
|Sliced fresh mushrooms||8 Ounce (1 Package)|
|Crumbled bacon||1⁄2 Cup (8 tbs)|
|Bottled red wine vinaigrette||1⁄3 Cup (5.33 tbs)|
|Black pepper||To Taste|
1. In a large salad bowl, combine spinach, carrot, and cheese. Set aside.
2. In a nonstick skillet over medium-high heat, heat oil. Add mushrooms and cook, stirring, until softened and browned, about 4 minutes. Stir in bacon and cook 2 minutes. Remove pan from the heat, add vinaigrette, and stir until just heated through.
3. Drizzle dressing over salad, season with pepper, and toss well. Serve immediately.
