Vegetarian Nicoise Salad

Ingredients
  Hard boiled eggs 4 , tooled
  Celery stick 4 , finely chopped
  Cucumber 1⁄2 , peeled, finely chopped
  Mayonnaise 1⁄2 Pint (300 Milliliter)
  Single cream 2 Tablespoon
  Seasoning 1 Tablespoon (Or As Required)
  Tomatoes 3 , skinned, seeded and coarsely chopped
  Black olives 4
  Chopped parsley 2 Tablespoon
Directions

1. Cut eggs in half lengthways.
2. Mix together celery and cucumber and place most of them in bottom of salad bowl or serving dish.
3. Arrange egg halves on top, yolk side down, and sprinkle remaining cucumber and celery round them.
4. Mix together mayonnaise and cream, season to taste and coat the egg halves with it.
