Carrot And Green Pepper Salad

Ingredients
  Carrots 3 Large, trimmed, scraped and shredded
  Green pepper 1 Small, chopped
  Olive oil 3 Tablespoon
  Grated orange rind 2 Tablespoon
  Lemon juice 1 Tablespoon (Approximately)
  Salt 1⁄4 Teaspoon
  Freshly ground pepper To Taste
Directions

In serving bowl, combine carrots and green pepper.
In small bowl, combine remaining ingredients, adding pepper to taste, and pour over carrots and green pepper; mix well.
Taste and adjust seasoning with more lemon juice and pepper, if desired.
Let stand at room temperature until serving time (up to 1 hour) or cover and refrigerate for longer storage.
