Healthy Grilled Chicken Salad
|Steak sauce||1⁄2 Cup (8 tbs)|
|Prepared italian salad dressing||1⁄2 Cup (8 tbs)|
|Dried basil leaves||1 Teaspoon|
|Boneless chicken breast halves||1 Pound|
|Mixed salad greens||6 Cup (96 tbs)|
|Snow peas||1⁄4 Pound, blanched, halved|
|Sliced mushrooms||1 Cup (16 tbs)|
|Red bell pepper||1 Medium, thinly sliced|
In small bowl, combine steak sauce, dressing and basil.
Place chicken in glass dish; coat with 1/4 cup marinade.
Cover; chill 1 hour, turning occasionally.
Arrange salad greens, snow peas, mushrooms and pepper slices on 6 individual salad plates; set aside.
In small saucepan, over medium heat, heat remaining marinade mixture; keep warm.
Remove chicken from marinade.
Grill over medium heat for 8 to 10 minutes or until done, turning occasionally.
Thinly slice chicken; arrange over salad greens and drizzle warm dressing over prepared salad.
Serve immediately, sprinkled with Parmesan cheese if desired.
