Celery And Beetroot Salad

Ingredients
  Garlic clove 1 Small
  Oil 3⁄4 Tablespoon (1 Dessertspoon)
  Lemon juice 2 Teaspoon
  Sugar 1 Pinch
  Chopped celery 3 Tablespoon
  Diced cooked beetroot 3 Tablespoon
  Chopped walnuts 1 Tablespoon
  Chopped parsley/Chervil / chives 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1. Crush the garlic and rub it round a mixing bowl.
2. Put the oil and lemon juice into the bowl, add seasoning and sugar and-blend well together.
3. Add the celery, beetroot and nuts and toss all together.
4. Put into a serving dish and sprinkle with parsley or other herbs.
