Middle Eastern Spinach Salad
|Lemon juice||1⁄4 Cup (4 tbs)|
|Olive oil||1 Tablespoon|
|Packed light brown sugar||1 Tablespoon|
|Curry powder||1⁄2 Teaspoon|
|Fresh spinach||1 Pound|
|Golden raisins||1⁄4 Cup (4 tbs)|
|Minced red onion||1⁄4 Cup (4 tbs)|
|Thin red onion slices||1⁄4 Cup (4 tbs)|
1.For dressing, combine lemon juice, oil, sugar and curry powder in small bowl with wire whisk until blended; set aside.
2.Wash spinach well to remove sand and grit; remove stems and bruised leaves. Drain well; pat dry with paper towels. Tear spinach into bite-sized pieces.
3.Toss spinach, raisins, minced onion and onion slices in large bowl. Add dressing; toss gently to coat.
