Wilted Raw Spinach Salad
|Bacon fat||2 Tablespoon|
|Onion||1 Small, minced|
|Water/Chicken consomme||1 Cup (16 tbs)|
|Powdered mustard||1 Teaspoon|
|Spinach||1 Pound, trimmed, washed, drained, in bite-sized pieces|
|Freshly ground pepper||To Taste|
Heat the bacon fat in a small casserole.
Add the onion.
Cook, stirring constantly, until the onion is soft and golden.
Stir in the flour and cook 1 more minute.
Stir in the water, mustard and vinegar.
Cook over low heat, stirring constantly, until thickened and smooth.
Put the spinach into a salad bowl.
Pour the dressing over the spinach and toss.
Season with salt and pepper and serve immediately.
