Warm Chicken Salad
|Shredded cooked chicken breast||1⁄2 Cup (8 tbs)|
|Diced sweet red peppers||1⁄2 Cup (8 tbs)|
|Nonfat mayonnaise||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Minced scallions||1 Tablespoon|
|No salt herb blend||1⁄2 Teaspoon|
|Shredded nonfat mozzarella cheese||1⁄4 Cup (4 tbs)|
|Shredded lettuce||1 Cup (16 tbs)|
In a large bowl, mix the chicken, peppers, mayonnaise, lemon juice, scallions and herb blend.
Coat a small baking sheet with no-stick spray.
Form the chicken mixture into 1 (or 2) flat mound(s).
Place on the sheet.
Sprinkle the chicken mixture with the mozzarella.
Broil about 4" from the heat for 5 minutes, or until the cheese has melted and the chicken is warmed through.
Place the lettuce on 1 (or 2) dinner plate(s).
Use a metal spatula to transfer the chicken mixture to the plate(s).
