1) In a medium-sized bowl, add the segmented orange slices and julienned jicama.
2) In a small bowl, prepare the salad dressing by combining orange juice, rice vinegar and olive oil.
3) Pour the dressing over the orange and jicama mix. Toss well.
4) Refrigerate to chill.
5) Serve the Jicama and Orange Salad chilled.
