Carrot And Raisin Salad

Ingredients
  Carrots 2 Cup (32 tbs), grated
  Canned pineapple 1⁄2 Cup (8 tbs), crushed
  Canned crushed pineapple 1⁄2 Cup (8 tbs)
  Dark raisins 2 Tablespoon
  Lemon juice 1 Tablespoon
  Low fat yogurt 1⁄4 Cup (4 tbs)
  Low calorie mayonnaise 2 Tablespoon
  Granulated low calorie sweetener 1⁄2 Gram (Equal To 1 Teaspoon Sugar)
  Coconut 2 Teaspoon, shredded
Directions

MAKING
1. In a medium bowl, mix together carrots, pineapple, raisins and, if desires, lemon juice
2. In a small bowl, mix together the remaining ingredients except coconut and whisk them together with a wire whisk
3. Pour it over the carrot mixture and toss till well blended; cover and refrigerate for an hour at the least

SERVING
4. Give a quick toss, sprinkle with coconut and serve
