Red And Green Pepper Salad

Ingredients
  Green pepper 1 Large, seeded
  Red pepper 1 Large, seeded
  Garlic 1 Clove (5 gm)
  Garlic 1 Clove (5 gm), minced
  Olive oil 2 Tablespoon
  Lemon juice 1 Tablespoon
  Cumin 1⁄2 Teaspoon
  Green onions 4
  Cinnamon 1 Pinch
  Green onions 4 , sliced
  Tomato 1 Large, peeled
  Tomato 1 Large, peeled, seeded and chopped
  Mint 1 Teaspoon, chopped
  Fresh mint 1 Teaspoon, chopped
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1. Cut green and red peppers into chunks and place in a large pie plate or bowl.

MAKING
2. Toss the pepper chunks with garlic and oil and microwave, covered, at High for 3 minutes, or until tender-crisp, stirring once.
3. Add lemon juice, cumin and cinnamon and let cool to room temperature.

SERVING
4. Add onions, tomato and mint, season with salt and pepper to taste and serve.
