Tropical Fruit Salad
|Ground ginger||1⁄2 Teaspoon|
|Fresh lime juice||1⁄4 Cup (4 tbs) (From 2 Limes)|
|Bananas||1 , peeled and sliced|
|Pineapple||1⁄4 , peeled and cut into bite-sized pieces|
|Cantaloupe||1⁄4 , peeled and cut into bite-sized pieces|
|Mango||1⁄2 , peeled and cubed|
|Kiwi||1 , peeled, halved, and sliced into half-circles|
|Strawberries||6 , stemmed and halved|
In a small bowl, mix the ginger and honey together well and then stir in the lime juice.
As you cut the fruit, place it in a large serving bowl, pour the dressing over it, and stir.
The lime juice will keep the fruit from discoloring.
This salad keeps well, covered, in the refrigerator for 2 or 3 hours.
If you wish to make the salad several hours ahead of time, omit the bananas and store the salad in the refrigerator.
Stir in the bananas a few minutes before serving.
Serve at room temperature or chilled.
