Calypso Salad

Ingredients
  Mayonnaise 1 Cup (16 tbs)
  Soy sauce 1 Tablespoon
  Ketchup 1 Tablespoon
  Lemon juice 1 Tablespoon
  Ginger 1⁄2 Teaspoon
  Chicken/Turkey /tuna /crab meat /lobster 1 Pound
  Green pepper 1 Cup (16 tbs), chopped
  Seedless grapes 1 Cup (16 tbs)
  Pineapple chunks 18 Ounce, drained
  Pimento 12 Ounce, chopped, drained (1 Jar)
  Almonds 1 Cup (16 tbs), slivered, toasted
  Lettuce 3 (As Needed, For Serving)
Directions

MAKING
1. In large bowl, combine mayonnaise, curry powder, soy sauce, ketchup, lemon juice, ginger and meat; mix well.
2. Add green pepper, grapes, pineapple and pimento; toss to mix.
3. Cover the bowl and refrigerate overnight.

SERVING
4. In a serving plate, prepare a bed of lettuce.
5. Add almonds and toss lightly.
6. Garnish with your favorite fruit.
