Jellied Pineapple Salad
|Crushed pineapple||1 Can (10 oz)|
|Sugar||1⁄2 Cup (8 tbs)|
|Lemon jello||3 Ounce (1 Package)|
|Lemon||1 , juice extracted and reserved rind|
|Whipped cream||1⁄2 Pint|
|Velveeta cheese||16 Ounce (1/2 Pack)|
|Pimento||2 Cup (32 tbs), chopped|
1. In a saucepan, boil pineapple and sugar for 3 minutes.
2. Add lemon jello, rind and juice of lemon; mix well and let it set until quivery.
3. Add whipped cream, Velveeta cheese and pimento; mix with folding movements.
4. Serve immediately.
