Chicken Salad A La Soy
|Roasting chicken||3 Pound|
|Sesame oil||3 Tablespoon|
|Soy sauce||3 Tablespoon|
|Tabasco sauce||1 Dash|
|Head of lettuce||1 Small, shredded|
|Head of lettuce||1 Small|
|Toasted slivered almonds||1 Tablespoon (For Garnish)|
|Mandarin orange slices/Pineapple cubes||3 (For Garnish)|
Place chicken, breast side up, in a shallow roasting pan.
Roast uncovered in a 375° preheated oven for 2 hours, or until drumstick easily moves up and down in socket.
Cool; discard skin and bones.
Shred chicken and refrigerate.
Combine oil, soy sauce and Tabasco; blend well and pour over chicken.
Line a platter or individual plates with shredded lettuce.
Mound chicken mixture on top.
Garnish with almonds and fruit.
Makes 8 servings.
