Chicken Salad A La Soy

Ingredients
  Roasting chicken 3 Pound
  Sesame oil 3 Tablespoon
  Soy sauce 3 Tablespoon
  Tabasco sauce 1 Dash
  Head of lettuce 1 Small, shredded
  Head of lettuce 1 Small
  Toasted slivered almonds 1 Tablespoon (For Garnish)
  Mandarin orange slices/Pineapple cubes 3 (For Garnish)
Directions

Place chicken, breast side up, in a shallow roasting pan.
Roast uncovered in a 375° preheated oven for 2 hours, or until drumstick easily moves up and down in socket.
Cool; discard skin and bones.
Shred chicken and refrigerate.
Combine oil, soy sauce and Tabasco; blend well and pour over chicken.
Line a platter or individual plates with shredded lettuce.
Mound chicken mixture on top.
Garnish with almonds and fruit.
Makes 8 servings.
