Carrot And Horseradish Salad

Ingredients
  Horseradish 2 Tablespoon
  Fresh horseradish/Bottled white horseradish - 2 tablespoons 1 (1 1/2 inch piece)
  Carrot 2 Medium
  Lemon juice 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Sugar 1 Pinch
  Yellow onion 1 Tablespoon, minced
  Chives 2 Teaspoon, minced
  Parsley 1 1⁄3 Tablespoon (1 Tablespoon Plus 1 Teaspoon)
  Dijon mustard 2 Teaspoon
  Sour cream 6 Tablespoon
Directions

GETTING READY
1) If using fresh horseradhish, peel it.
2) With a grater or food processor, grate the horseradish.
3) Trim the ends of peeled carrots and cut them into halves, lengthwise.
4) Slice carror halves into quarters and grate.

MAKING
5) In a bowl, combine all other ingredeints except 1 teaspoon parsley.
6) Toss in carrots and horseradish (either fresh or bottled).
7) Cover the bowl and keep to chill.

SERVING
8) Sprinkle 1 teaspoon parsley just before serving the salad.
