Cherry-Port Salad

Cherries are a wonderful ingredient that let you work out a piece of art every time. This cherry-port salad is a creation that is done with a lot of attention to detail. Worth every bit of the effort.
Ingredients
  Canned bing cherries 20 Ounce
  Black cherry gelatin 10 Gram
  Salt 1 Pinch
  Port 1 Cup (16 tbs)
  Almonds 1⁄2 Cup (8 tbs)
  Mayonnaise 1 Cup (16 tbs)
  Heavy cream 1 Cup (16 tbs)
  Sugar 1 Tablespoon
  Tarragon vinegar 1 Tablespoon
  Cayenne pepper 1 Pinch
Directions

GETTING READY
1. Drain cherries and reserve juice.
2. Add enough water to reserved juice to measure 1 cup liquid.

MAKING
3. Into saucepan pour and bring to a boil.
4. Remove from heat and stir in gelatin until dissolved.
5. Add salt and port and chill until partially set.
6. Fold in cherries and almonds.
7. Pour into mold and chill until firm.
8. In a bowl, blend well combining mayonnaise, cream, sugar, vinegar and cayenne pepper.
9. Chill until ready to use.

SERVING
10. Serve as dressing for salad.
