Celery Root Salad
|Celery root||1 Large|
|Olive oil||2 Tablespoon|
|Fresh lemon juice||2 Tablespoon|
|Mayonnaise||1 Cup (16 tbs)|
1)In a deep kettle add celery root and water. Boil for 45 minutes or until easily pierced with fork. Drain and chill.
2)Peel celery root and dice it coarsely.
3)In a bowl, add onion, oil, celery, lemon juice, salt, pepper and sugar and stir to mix.
4)Sprinkle some mayonnaise to moisten it.
5)Refrigerate it for 2-3 hours until served.
6)Serve the celery root salad chilled on a plate lined with lettuce.
