Grilled Chicken Salad With Almonds And Cucumbers

Ingredients
  Almonds 1⁄4 Cup (4 tbs), blanched, slivered
  Chicken breast 1 , grilled and cooled
  Dijon mustard 1 Tablespoon
  Lemon juice 1 Tablespoon
  Olive oil 1⁄4 Cup (4 tbs)
  Salt 1 Pinch
  Pepper To Taste
  Cucumber 1 , peeled, halved, seeded and sliced
  Butter lettuce leaves/Red leaf lettuce 4 (Outer Leaves)
Directions

MAKING
1. In a small, dry skillet, toast the almonds and shake every now and then to toast them evenly; set aside for a while
2. With a knife or just with hands, shred the chicken and slice the skin into thin strips; you may also discard it
3. In a medium bowl, mix together mustard, lemon juice, oil, salr and pepper and toss the chicken, almonds and cucumbers in it

SERVING
4. Arrange large lettuce leaves on a plater and serve the salad on top
