|Sauerkraut||2 Cup (32 tbs), well-drained|
|Carrots||2 Cup (32 tbs), shredded|
|Celery||1 Cup (16 tbs), finely chopped|
|Green bell pepper||1 Cup (16 tbs), finely chopped|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Pimento||1⁄4 Cup (4 tbs), chopped|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|White vinegar||1⁄3 Cup (5.33 tbs)|
|Black pepper||To Taste|
1) In a large mixing bowl,mix together sauerkraut, carrots, celery, green pepper, onion and pimento.
2) In a separate bowl, mix together sugar, vinegar, salt and pepper and pour over sauerkraut mixture.
Toss lightly to mix.
3) Chill covered with lid for at least 4 hours before serving.
