Tropical Fruit Salad
|Pineapple||2 Cup (32 tbs), cubed 1/2 inch (Ripe)|
|Cantaloupe||2 Cup (32 tbs)|
|Watermelon balls||2 Cup (32 tbs), seeded|
|Bananas||2 Cup (32 tbs), sliced, 1/4 inch thick|
|Lime juice||1⁄4 Cup (4 tbs)|
|Orange juice||1⁄4 Cup (4 tbs)|
|Mint leaves||1⁄4 Cup (4 tbs), chopped|
|Coconut||1⁄4 Cup (4 tbs), shredded, toasted|
|Mint||6 (For Garnish)|
1) In a large bowl, place the pineapple, cantaloupe, water-melon and bananas together.
2) In a small bowl, mix the lime and orange juices and sugar together. 3) Pour over the fruits and gently fold all the ingredients together.
4) When ready to serve, fold in the chopped mint and sprinkle over the toasted shredded coconut.
5) Garnish the salad with fresh mint sprigs and serve immediately.
