Grilled Pepper Salad

Ingredients
  Red peppers 3 , halved and deseeded
  Yellow peppers 3 , halved and deseeded
  Fresh oregano 2 Tablespoon, chopped
  Garlic 1 Clove (5 gm), crushed
  Wine vinegar 1 Tablespoon
  Olive oil 4 Tablespoon
Directions

MAKING
1. Rinse and dry the peppers and grill them for a few minutes till the skin blisters
2. Add to a plastic bag, close loosely and allow to cool completely; peel the skin off when it cools and cut into thin strips
3. Add to a dish along with herbs and seasonings and add a minxture of garlic, wine vinegar and olive oil
4. Allow to stand for a whole day

SERVING
5. Serve as required
