Rice Salad With Parsley
|Long grain brown rice||2 Cup (32 tbs)|
|Olive oil||3 Tablespoon|
|Green bell pepper||1 , diced|
|Onion||1 Medium, chopped|
|Tomatoes||2 Large, peeled and chopped|
|Fresh parsley||1⁄2 Cup (8 tbs), chopped|
|Fresh basil||1⁄4 Cup (4 tbs), chopped|
|Ripe olives||1⁄2 Cup (8 tbs), sliced|
1 Following the package directions, cook the rice.
2 In a bowl add rice while its still warm and toss with oil and pepper.
3 Allow to cool.
4 Add green pepper, onion, tomato, herbs, and olives.
5 Toss gently and chill.
6 Serve in a lettuce-lined bowl.
