Lamb Luncheon Salad

Ingredients
  Cold cooked rice 3 Cup (48 tbs)
  Cubed cooked lamb 2 Cup (32 tbs)
  Tomato 1 Medium, diced
  Chopped red onion 1⁄2 Cup (8 tbs)
  Chopped parsley 1⁄2 Cup (8 tbs)
  Diet salad dressing 1⁄2 Cup (8 tbs) (Italian)
  Lemon juice 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

MAKING
1.In a large bowl, mix rice, lamb, tomato, red onion, parsley, salad dressing, lemon juice, salt and pepper.
2.Refrigerate the mixture.

SERVING
3.Serve the mixture on lettuce greens.
