Lamb Luncheon Salad
|Cold cooked rice||3 Cup (48 tbs)|
|Cubed cooked lamb||2 Cup (32 tbs)|
|Tomato||1 Medium, diced|
|Chopped red onion||1⁄2 Cup (8 tbs)|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Diet salad dressing||1⁄2 Cup (8 tbs) (Italian)|
|Lemon juice||3 Tablespoon|
1.In a large bowl, mix rice, lamb, tomato, red onion, parsley, salad dressing, lemon juice, salt and pepper.
2.Refrigerate the mixture.
3.Serve the mixture on lettuce greens.
