Fresh Mushroom Salad
|Large mushrooms||1 Pound|
|Scallions||1⁄2 Cup (8 tbs), thinly sliced|
|Mock sour cream||1⁄4 Cup (4 tbs)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Red wine vinegar||6 1⁄2 Tablespoon|
|Gorgonzola cheese/Blue cheese||1 Tablespoon|
|Freshly ground pepper||To Taste|
|Garlic powder||1 Dash|
|Dill weed||1⁄4 Teaspoon|
1 Throughly wash the mushrooms and neatly remove the stems.
2 Slice mushrooms and tomatoes as thinly as possible.
3 In a bowl, combine all other ingredients.
4 Using tomato slices, line the outside of a serving platter.
5 Arrange the mushrooms in the center of plate.
6 Pour half the dressing over all and serve.
