Macaroni Salad Ricotta

Ingredients
  Whole wheat macaroni 1⁄4 Pound, cooked until tender, drained and chilled
  Ricotta cheese 1 Cup (16 tbs) (Made From Partially Skimmed Milk)
  Mustard 2 Teaspoon
  Low fat yogurt 1 Tablespoon (Or More)
  Ripe olives 1⁄4 Cup (4 tbs), sliced or chopped
  Green pepper 1 , chopped coarsely
  Scallion with tops 2 , chopped
  Parsley 1 Tablespoon, chopped
  Red pimento 1 (To Taste)
  Dill 1⁄2 Teaspoon
  Basil 1⁄2 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1) In a bowl, prepare the dressing with mayonnaise consistency by mixing mustard with a tablespoon or more of yogurt and ricotta.
2) Add all other ingredients to combine.

SERVING
3) Serve by garnishing with extra cheese, if desired.
