Honey Mustard Potato Salad
|Plain non fat yogurt||3⁄4 Cup (12 tbs)|
|Prepared mustard||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Chopped fresh parsley||2 Tablespoon|
|Chopped pepper||2 Tablespoon (Red / Green Variety)|
|Chopped red onion||1⁄4 Cup (4 tbs)|
|Cooked sliced potatoes||3 Cup (48 tbs)|
1) Take a serving bowl and mix together yogurt, mustard, honey, lemon juice, parsley, sweet pepper, and onion in it.
2) Slowly mix in potato slices, tossing them to coat well with the dressing.
3) Cover the bowl and keep in refrigerator for a minimum of 15 minutes to allow chilling.
4) Again mix well and if desired, drain the liquid from the salad and serve at once with a slotted spoon.
