Citrus And Cucumber Salad
|Medium grapefruit||1 Pound|
|Small navel orange||6 Ounce (1 Piece)|
|Cucumber||1⁄2 Cup (8 tbs), sliced, pared|
|Olive oil||2 Teaspoon|
|Fresh mint||1 Teaspoon, chopped|
|Seasoned rice vinegar||1 Teaspoon|
1.Take a small mixing bowl and over this peel and cut orange and grapefruit so as to catch the juice and reseve it.
2.In a small bowl, whisk together oil, mint, vinegar, reserved juices.
3.Onto a serving platter, place a layer of lettuce.
4. Over this, arrange sections of orange, grapefruit and cucumber slices decoratively.
5. Drizzle with orange mixture.
