Chicken Vegetable Salad

|White meat of chicken/Turkey||2 Cup (32 tbs), chunked|
|White chicken meat/White turkey meat||2 Cup (32 tbs), chunked|
|Cucumber||1⁄2 , peeled and diced|
|Diced celery||1⁄2 Cup (8 tbs)|
|Celery||1⁄2 Cup (8 tbs), diced|
|Water chestnuts||1⁄2 Cup (8 tbs), drained and sliced|
|Green pepper||1⁄2 Cup (8 tbs)|
|Diced green pepper||1⁄4 Cup (4 tbs)|
|Pimiento||1⁄4 Cup (4 tbs), chopped|
|Chopped pimiento||1⁄4 Cup (4 tbs)|
|Sliced scallions||1⁄4 Cup (4 tbs)|
|Scallions||1⁄4 Cup (4 tbs), sliced|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Lettuce||6 Cup (96 tbs)|
1) In a bowl, add first 7 ingredients.
2) Toss with mayonnaise.
3) Serve the mixture in lettuce cups and sprinkle capers on top.
