Cucumber And Zucchini Salad

Ingredients
  Cucumber 1 Medium
  Yellow zucchini 1 Medium
  Tomato 1 Medium
  Olive oil 1⁄4 Cup (4 tbs) (For the Vinnaigrette)
  Pepper 1⁄2 Teaspoon (For the Vinnaigrette (as per taste))
  Lemon zest 1 Teaspoon (For the Vinnaigrette)
  Fresh basil 1 Teaspoon, chopped finely (For the Vinnaigrette)
Directions

MAKING
To make the Vinnaigrette:
1. In a bowl mix all the vinnaigrette ingredients well.

To arrange the salad:
2. Cut cucumber, zucchini and tomato into round slices.

SERVING
3. On a serving plate arrange all the vegetable slices in a circular fashion.
4. Pour over the vinnaigrette and serve.
