BLT Potato Salad
|New red potatoes||12 Ounce, cut into 1 /2 inch cubes (4 Small Size)|
|Fat free mayonnaise/Salad dressing||1⁄4 Cup (4 tbs)|
|Dijon mustard||1 Teaspoon|
|Chopped fresh dill weed/1/2 teaspoon dried dill weed||2 Teaspoon|
|Grape tomatoes/Halved cherry tomatoes||1⁄2 Cup (8 tbs)|
|Bite size romaine pieces||1 1⁄2 Cup (24 tbs)|
|Bacon slices||2 , cooked, crumbled|
1 In a 2-quart saucepan,place potatoes.Add enough water to cover and bring to a boil.Reduce heat to low,cover and cook for 10-15 minutes or until the potatoes are tender.Drain and cool for about 10 minutes.
2 In a medium bowl,mix ayonnaise,mustard,dill weed,salt and pepper.Stir in potatoes ,tomatoes and lettuce.
3 Sprinkle bacon over the salad just befor serving.
