Jellied Cranberry Salads
|Fresh cranberries||1 1⁄2 Cup (24 tbs), drained, rinsed|
|Sugar||1 Cup (16 tbs)|
|Lemon flavored gelatin||3 Ounce (1 Package)|
|Water||2 Cup (32 tbs) (Adjust Quantity As Required)|
|Diced celery||1⁄2 Cup (8 tbs)|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
Force cranberries and orange through food chopper.
Add sugar and let stand, stirring occasionally, until sugar dissolves.
Dissolve gelatin in 1/2 cup boiling water.
Drain fruits and measure juice.
Add enough water to juice to make 1 1/2 cups liquid.
Add liquid to gelatin and stir in fruits.
Add celery and walnuts.
Pour mixture into custard cups.
Chill until firm.
To serve, unmold in lettuce cups and serve with mayonnaise mixed with equal measure of sweetened whipped cream.
