Avocado Circle Salad
|Lemon juice||2 Tablespoon|
|Cottage cheese||1⁄2 Cup (8 tbs)|
|Lettuce||1 Cup (16 tbs)|
|French dressing||1 Tablespoon|
1. Peel, deseed and mash the avocado meat with lemon juice and salt. Reserve the avocado shells.
2. Mix cottage cheese, onion and paprika and fill avocado cavities with cottage cheese mixture. Place halves together and set aside to chill. Slice crosswise.
3. Serve on lettuce with French dressing.
