Potato Salad

Ingredients
  Waxy potatoes 1 Pound, cooked, peeled and sliced (450 Gram)
  Mayonnaise 4 Fluid Ounce (120 Milliliter)
  Lemon juice 1 Tablespoon
  Olive oil/Good vegetable oil 1 Tablespoon
  Finely chopped fresh chives 2 Tablespoon
  Finely chopped leeks 4 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Combine mayonnaise, lemon juice, 1 tbsp of chives along with salt and pepper.

MAKING
2) In a mixing bowl, arrange the potato slices.
3) Pour the mayonnaise mixture over the potatoes and toss well.
4) In a serving dish, transfer the potato mixture and sprinkle with remaining chives. 5) Around the bowl edges, scatter some leeks.
6) Cover the dish and chill for 30 minutes.

SERVING
7) Serve the chilled salad as appetizer.
