New Style Chicken Salad

Ingredients
  Boneless skinless chicken breast halves 1 1⁄2 Pound (4 Pieces)
  Sweet peppers 2 , sliced (Red / Yellow / Green Variety)
  Red onion 1 Large, thickly sliced
  Zucchini 2 , thickly sliced
  Cherry tomatoes 1⁄2 Pint, halved
  Olive oil/Canola oil 1⁄4 Cup (4 tbs)
  Lemon juice 2 Tablespoon
  Finely grated lemon zest 1 Teaspoon
  Dried basil 2 Teaspoon
  Mixed lettuce 4 Cup (64 tbs)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1. Slice the chicken breast into 4 slices.
2. Take a baking dish and put the sliced chicken in it.

MAKING
3. In a separate dish, add the peppers, zucchini, onion, and cherry tomatoes.
4. Take a small bowl and mix lemon juice or lemon zest, salt, basil, and pepper until blended.
5. Add the marinade over the chicken and the remaining marinade on the top of the vegetables. Toss them to coat.
6. Use plastic wrap to cover both dishes and marinate in the refrigerator for about 2 hours.
7. Lastly, remove the chicken and drain from the marinade.

SERVING
8. Serve in a serving dish.
