Gardiners Bay Potato Salad
|Water||1 Cup (16 tbs) (Adjust Quantity As Needed)|
|Oil and vinegar dressing||1⁄2 Cup (8 tbs)|
|Finely chopped peeled seeded cucumber||3⁄4 Cup (12 tbs)|
|Shallots/Green onions||3 , finely chopped|
|Mayonnaise||1 Cup (16 tbs)|
|Celery seed||1 Teaspoon|
|Fresh lemon juice||3 Tablespoon|
|Chopped fresh basil||3 Tablespoon|
|Ground black pepper||To Taste|
Wash potatoes and place them in a small kettle or saucepan.
Add water to cover and salt and simmer until done, 20 minutes or longer depending on size.
Drain and peel the warm potatoes and slice into a mixing bowl.
Pour oil and vinegar dressing over them, and chill.
Before serving add remaining ingredients and toss lightly; garnish with hard-cooked eggs and parsley, if desired.
