Gardiners Bay Potato Salad

Ingredients
  Potatoes 3 Pound
  Water 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Salt To Taste
  Oil and vinegar dressing 1⁄2 Cup (8 tbs)
  Finely chopped peeled seeded cucumber 3⁄4 Cup (12 tbs)
  Shallots/Green onions 3 , finely chopped
  Mayonnaise 1 Cup (16 tbs)
  Celery seed 1 Teaspoon
  Fresh lemon juice 3 Tablespoon
  Chopped fresh basil 3 Tablespoon
  Ground black pepper To Taste
Directions

Wash potatoes and place them in a small kettle or saucepan.
Add water to cover and salt and simmer until done, 20 minutes or longer depending on size.
Drain and peel the warm potatoes and slice into a mixing bowl.
Pour oil and vinegar dressing over them, and chill.
Before serving add remaining ingredients and toss lightly; garnish with hard-cooked eggs and parsley, if desired.
