Macedoine Of Vegetables
|Frozen peas||10 Ounce (1 Box)|
|Cucumber||1 , peeled and thinly sliced|
|Green onions||4 , minced|
|French dressing||1⁄2 Cup (8 tbs)|
|Lemon||1 , juiced|
|Salad greens||1 Cup (16 tbs)|
|Canned sliced pickled beets||1 Pound, drained (1 Can)|
1. Drain peas cooked to just tender, cool, add to green onions, cucumber and ¼ cup of dressing and toss well.
2. Slice peeled avocado and top with salt and lemon juice.
3. Take a platter, arrange in a circle with greens up. Place sliced beets to surround avocado. Heap pea mixture in the middle. Pour rest of the dressing on beets and avocado.
4. Serve immediately.
