Four Star Cabbage V Fruit Salad

Ingredients
  Finely shredded cabbage 500 Milliliter (2 Cup)
  Sunflower oil 15 Milliliter (1 Tablespoon)
  Tangerine/Orange 1
  Pink grapefruit 1
  Red grapes 250 Milliliter, halved (1 Cup)
  Unpeeled apple 1 , chopped
  Tarragon vinegar 15 Milliliter (1 Tablespoon)
Directions

Place the cabbage in a salad bowl, and toss with the oil until well coated.
Section and remove the membranes from the orange and grapefruit and add to the cabbage.
Add grapes and apple to the cabbage.
Sprinkle with Tarragon Vinegar and toss to combine.
Serve chilled.
In summer, garnish with chopped fresh mint.
