Potato Salad with Fresh Green Beans
|Fresh green beans||3 Ounce|
|Cooked potatoes||4 Medium|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Beef bouillon||1 Teaspoon|
|Ground allspice||1⁄4 Teaspoon|
|Oil||1⁄2 Cup (8 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Chopped parsley||1 Tablespoon|
String green beans, sprinkle with salt, wrap and then heat in the Microwave Oven 2 minutes.
Wash and dice.
Place a paper towel in a glass bowl, place bacon on it, cover with a paper towel and cook 2 minutes, 30 seconds.
Remove paper towels and bacon and leave bacon fat.
Add chopped onion to the fat; cook, uncovered, 1 minute.
Add sugar, flour, beef couillon, allspice, salt, pepper, oil and vinegar and cook, uncovered, 3 minutes, stirring twice.
Peel potatoes and slice.
Add potatoes and fresh green beans to this hot mixture and shake gently.
Crush fried bacon, add to the mixture and sprinkle with chopped parsley.
Serve while hot.
