Fresh Black Eyed Pea Salad

Ingredients
  Black eyed peas 1 Can (10 oz)
  Tomatoes 2 Large, chopped
  Thai peppers 4 Small (Red)
  Onion 1⁄2 , finely chopped
  Torn spinach leaves 1⁄2 Cup (8 tbs) (Handful, Fresh)
  Chopped fresh parsley/Coriander 1⁄2 Cup (8 tbs) (Handful)
  Lemon juice 1⁄2 Tablespoon (Juice Of 1/2 Lemon)
  Orange 1⁄2 , juiced
  Garlic 1 Clove (5 gm), chopped finely
  Yogurt 1⁄2 Cup (8 tbs)
  Ground cumin 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Teaspoon
  Olive oil 3 Tablespoon
Directions

GETTING READY
1) In a small bowl, to combine lemon and orange juice, cumin, oil, salt and pepper. Keep it aside.

MAKING
2) In a large bowl, place peas, onion, garlic, parsley, hot peppers and tomatoes. Combine all together.
3) Pour the dressing over the salad and toss well.
4) Add spinach leaves, coriander or parsley to the salad.
5) Pour in yoghurt and give a final toss.

SERVING
6) Garnish with mandarin orange segment before serving.
