Scallop Salad

Ingredients
  Scallops 1 Pound
  Boiling water 1 Quart
  Salt 1 Teaspoon
  Onion 1 Small
  Garlic 1⁄2 Clove (2.5 gm)
  French dressing 1⁄2 Cup (8 tbs)
  Chopped celery 1 1⁄2 Cup (24 tbs)
  Diced sweet pickles 1⁄2 Cup (8 tbs)
  Mayonnaise 1⁄4 Cup (4 tbs)
  Lettuce 2
Directions

1. Drain and rinse scallops.
2. Drop into boiling water and add salt, onion and garlic.
3. Cook for 10 minutes.
4. Drain and chill.
5. Dice scallops and marinate in French dressing for 1 hour.
6. Combine with celery, pickles and mayonnaise and serve on crisp lettuce.
7. Garnish with cucumber slices.
