Bean Salad

Ingredients
  Dried white beans 1⁄2 Pound
  Olive oil 3 Tablespoon
  Lemon juice 2 Tablespoon
  Onion 1 Medium, minced
  Chopped parsley 1⁄4 Cup (4 tbs)
  Tomatoes 2
  Black olives 4
  Salt To Taste
  Pepper To Taste
Directions

Soak beans and boil until soft; drain and chill.
Mix with oil and lemon juice, onion and parsley, and salt and pepper to taste.
Serve garnished with tomatoes and olives
