Black Bean Salad

Ingredients
  Spicy black beans with liquid 1 Cup (16 tbs), drained
  Chopped zucchini 1⁄3 Cup (5.33 tbs)
  Drained canned whole kernel corn 1⁄4 Cup (4 tbs)
  Chopped red bell pepper 2 Tablespoon
  Chopped green onions 1 Tablespoon
  Minced cilantro 1 Tablespoon
  White balsamic vinegar 2 Tablespoon
  Seeded minced jalapeno pepper 1 Teaspoon
  Minced garlic 1 Teaspoon
  Olive oil 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Lettuce leaves 2 (Curly)
Directions

MAKING
1. In a bowl, combine zucchini, black beans, corn, bell pepper, green onions, garlic, oilve oil, cilantro, vinegar, salt and pepper and jalapeno and toss it all well
2. Cover the bowl and chill for a couple of hours

SERVING
3. Line the plate with lettuce, spread the salad and serve
