Jellied Chicken Or Turkey Salad
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Cold water||1⁄2 Cup (8 tbs)|
|Chicken broth||3 Cup (48 tbs)|
|Lemon juice||2 Tablespoon|
|Minced cooked chicken/Minced cold cooked turkey||3 Cup (48 tbs), cold (Preferably White Meat)|
|Minced celery||1⁄4 Cup (4 tbs)|
|Minced sweet green pepper||1⁄4 Cup (4 tbs)|
|Minced scallions||1⁄4 Cup (4 tbs)|
|Minced pimiento||2 Tablespoon|
Heat and stir gelatin with water and broth until dissolved; mix in lemon juice and salt.
Chill until thick and syrupy, mix in remaining ingredients, spoon into an ungreased 9"x5"x3" loaf pan, cover, and chill until firm.
Loosen edges and unmold.
If you like, pass a thin mayonnaise-type dressing.
