Tuna And White Bean Salad
|Extra virgin olive oil||1 Tablespoon|
|Fresh lemon juice||1 Tablespoon|
|Chopped sweet white onion||1 Tablespoon (Like Vidalia)|
|Dried oregano||1⁄4 Teaspoon, crumbled|
|Canned tuna packed in olive oil||6 Ounce, drained (1 Can, Solid Light Tuna)|
|Haas avocado||1⁄2 , peeled and cut into 1/2-inch chunks|
|Canned cannellini beans||1⁄2 Cup (8 tbs), drained and rinsed|
|Roasted red pepper||1 , drained and patted dry, cut into strips|
1. For the dressing: Mix oil, lemon juice, onion, oregano, and salt in a small bowl.
2. For the salad: Break tuna into large chunks in a salad bowl. Add avocado, beans, and roasted pepper. Pour dressing over; season with pepper, and toss gently.
