Mixed Greens and Grilled Peach Salad with Shaved Cheddar

  Mixed greens 8 Ounce, cleaned and dried
  Thinly sliced onion rings 3 (Red Onion)
  Shredded aged cheddar cheese 3 Ounce (Or Shaved)
  Freshly ground black pepper To Taste
  Peaches 3 , thinly sliced and, if desired, lightly grilled
  Toasted pecans 3 Ounce
  Wild blackberry honey 3 Tablespoon (Honey Ridge Farms)
For lemon honey vinaigrette
  Nut oil 3 Ounce (Macadamia / Walnut)
  Garlic 3 Clove (15 gm), minced
  Shallots 2 , minced
  Lemon thyme 1 Ounce, cleaned and picked
  Grated lemon zest 1 Tablespoon (Of 1 Lemon)
  Wild blackberry honey 1 Tablespoon
  Balsamic honey vinegar 1 Ounce (Honey Ridge Farms)
  Lemon juice 2 Tablespoon (Of 1 Lemon)
  Dijon mustard 1 Tablespoon
  Salt To Taste
  Pepper To Taste

Combine greens with onion rings. Top with cheddar shavings and fresh ground pepper, to taste. Serve with Honey-Lemon Vinaigrette and sliced grilled peaches with toasted pecans, drizzled with blackberry honey.

Lemon Honey-Thyme Vinaigrette Directions:

Combine oil with the minced garlic, shallots, lemon-thyme, zest and honey. Slowly steep mixture on a low heat for 30 minutes; allow to cool. Blend together vinegar, lemon juice and mustard; slowly add to this the infused oil until emulsified. Season with salt and pepper. Tip: This vinaigrette is great for dressing baby greens, grilled foods, potato and slaw salads.
