Mixed Greens and Grilled Peach Salad with Shaved Cheddar
|Mixed greens||8 Ounce, cleaned and dried|
|Thinly sliced onion rings||3 (Red Onion)|
|Shredded aged cheddar cheese||3 Ounce (Or Shaved)|
|Freshly ground black pepper||To Taste|
|Peaches||3 , thinly sliced and, if desired, lightly grilled|
|Toasted pecans||3 Ounce|
|Wild blackberry honey||3 Tablespoon (Honey Ridge Farms)|
|For lemon honey vinaigrette|
|Nut oil||3 Ounce (Macadamia / Walnut)|
|Garlic||3 Clove (15 gm), minced|
|Shallots||2 , minced|
|Lemon thyme||1 Ounce, cleaned and picked|
|Grated lemon zest||1 Tablespoon (Of 1 Lemon)|
|Wild blackberry honey||1 Tablespoon|
|Balsamic honey vinegar||1 Ounce (Honey Ridge Farms)|
|Lemon juice||2 Tablespoon (Of 1 Lemon)|
|Dijon mustard||1 Tablespoon|
Combine greens with onion rings. Top with cheddar shavings and fresh ground pepper, to taste. Serve with Honey-Lemon Vinaigrette and sliced grilled peaches with toasted pecans, drizzled with blackberry honey.
Lemon Honey-Thyme Vinaigrette Directions:
Combine oil with the minced garlic, shallots, lemon-thyme, zest and honey. Slowly steep mixture on a low heat for 30 minutes; allow to cool. Blend together vinegar, lemon juice and mustard; slowly add to this the infused oil until emulsified. Season with salt and pepper. Tip: This vinaigrette is great for dressing baby greens, grilled foods, potato and slaw salads.
