Molded Cottage Cheese And Spinach Salad

Ingredients
  Fresh spinach leaves 1 Quart (Prepared, Lightly Packed For Measuring)
  Hard cooked eggs 3 , peeled and diced
  Cottage cheese 1 1⁄2 Cup (24 tbs)
  Sweet green pepper 1 Medium, cored, seeded and minced
  Minced celery 1⁄2 Cup (8 tbs)
  Mayonnaise 1⁄2 Cup (8 tbs)
  Salt 1 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

Mix all ingredients and pack into a lightly oiled 5-cup ring mold.
Cover and chill 3-4 hours.
Unmold and garnish, if you like, with tomato wedges and parsley or watercress sprigs.
