RED CABBAGE SALAD
|Red cabbage||1 Small|
|Sour apples||2 Large|
|Onion||2 Tablespoon, grated|
|Vinegar||1⁄2 Cup (8 tbs)|
Halve and wash a firm red cabbage and drain well.
Shred very finely and discard all thick ribs.
Sprinkle generously with salt, stamping the salt well into the cabbage with a mallet.
Cover closely and allow to stand for 1 hour, then squeeze all the water out of the shredded cabbage.
Peel and shred the apples and add to the cabbage with the other ingredients, mixing together with two forks.
Test for seasoning after standing salad for 1/2 hour.
